I just got through my first complete month myself…and things are trending upward. Glad to hear the combo works for you, it does for me in my location as well.
I am in a nice outdoor mall and I can move around to a few more locations in it, but for now plan on staying at one and building my following and brand awareness. Our “regular” base is increasing. In just 5 weeks I can place 30-35% of my upward trending daily sales entries on the regulars. Further, people start telling other people so I am getting many customer’s saying “Oh my sister told me about you, or a guy from work” when they come and find me for the first time. Don’t forget that aspect of your business as it pertains to word of mouth. The further removed you get from consistency, the greater chances that you get blocked out on a top 7 list of places to go eat at. Most people have a max of about 7 of any item they recall in their mind, and you want your business to stay in “Top of mind awareness” as they say.
I know everyone has a different method and situation, I am just saying that that for my business, being there consistently is bringing growth. Though you’re idea is one I had for the off season business as I am tied into a lease where I am at. After that I thought about contacting several large employers and get a 1 day a week lunch only gig with a portion of the sales to the HR departments charity of choice. You become something to look forward too.
