I use the #11’s. They fit the Friehofer bun perfect with room for multiple toppings.
NYC street dogs are usually #12. They are okay too. #10 and lower have a chewy casing instead of a crisp snap, imo. Difference between #11 and #12 comes out to roughly $4500/yr additional revenue for a good location.
