We had an old hand cranked grinder (chopper) until we retired and moved to Ocean City. We moved from a three bedroom house with a basement, to a one bedroom cottage with no basement. One of the multitude of things we had to give up was the grinder. (No storage space) I used it mainly for chopped liver, but I also remember a dish my mother made with a hand grinder when I was a kid back in the 50’s. She would grind bologna, dill pickles and a little onion then mix it with mayo for a sandwich spread. I loved that stuff!!
My mom’s version was bologna, sweet pickle relish, and Miracle Whip. But you had to broil it, on white bread, with a slice of American cheese on top. I hated it with a mad passion when I was a kid, but every once in a while I’ll make something similar now. My version is hand minced rather than ground, and I use ring bologna, extra-sharp cheddar, sweet pickles, and real mayo. Then I broil, but skip the slice of American and use way better bread.
