Really simple. Take some Italian sweet sausage, preferably bulk (I used about 1/2 lb.) Add it in bite-sized pieces to a pot with medium-hot olive oil. Brown the sausage. Add in 2 carrots, 1/2 Spanish onion and 1 celery stalk, all diced. Throw in some chopped garlic. Don’t brown the garlic. Add 1/2 head chopped cabbage. Toss that all around, cover with chicken stock. When it comes to a boil add I can of cannellini beans and about 1/2C tomato sauce. Let it simmer for 1 hour. Done! Add grated Parmigiano Reggiano when you serve. Buon appetito!
