This is the first time I made them with lima beans. I usually get them labeled as hocks and cook them with navy beans. They usually do fall apart and except for boiling them separately first I sort of do it the same way as Lisa.
The hocks that fell apart tasted great. This one (It was one cut in two) just acted differently in taste, texture and fall apart-ability. It also didn’t have the thicker skin I’m used to when using ham hocks. It was different for sure.
