Inspired by Leechef’s Pork and Hatch Green Chili Stew, I’m making a pot for dinner. Sadly no fresh roasted Hatch chilies, I used canned along with some tomatillos, golden hominy, celery, onion, carrot, marjarom, garlic, cumin, small can stewed tomatoes and about 3 lbs of carnitas leftover from today’s special. I have a bunch of pork neck bones in the freezer and was going to make a nice stock, but got started too late so I used some roasted chicken stock I had in the freezer.
