This was yesterday, since I’ve been stupid busy since then and am now at my niece’s house dog-sitting while they’re on vacation. Diabetic-friendly version of shrimp piccata (using zucchini noodles), spiralized carrot salad, Vidalia onion casserole, blueberry corn muffins, and for dessert parfaits made with banana-blueberry-lemon bread, lemon Greek yogurt, and blueberries.
Tonight I’m having leftovers of all of those things, except the parfait. There is, however, most of the loaf of bread left. And mom made me bring all of it with me in case there’s no food here. [lol]
