Haven’t had a REAL bagel since the late 60s when my grandfather used to pick them up in Boyle Heights before coming to our house for breakfast.  He had a delicatessen/market there and brought wonderful hand sliced lox, smoke codfish and chubs for everyone.  Those were the days when bagels were water, onion, pumpernickel or egg and you could also get Bialys.  None of this cinnamon/raisin stuff or those covered with melted cheese.

 

But, those I buy at Eastern Bagel or Noah’s are better than any I can get at a delicatessen.  I’ve never understood why.
