Bay Scallops. Little nuggets of raw scallops!
Well.. That’s what they called them. Don’t know if I’ve ever had a Calico Scallop or even a Bay Scallop because they’re always called Bay Scallops when they’re tiny like these.
Yeah, that’s a problem. Lots of restaurants and supermarkets call them bay scallops even when they’re calicos. Bay scallops are cold-water scallops — the very best, and they’re not that plentiful. Calicos come from warmer water and they have to be steamed open, which means they’re partially cooked before they’re sold.
