Pillsbury would probably call it “Crescent Roll Enchilada Bake”. I wonder if somewhere there’s a potentially offensive image of Poppin’ Fresh wearing a serape, sombrero, and bandito mustache.[;)]
Probably that should not have made me laugh as hard as it did, but whatever. I actually got the idea for using the crescent dough from Pillsbury, but theirs was with beef instead of shrimp. [:D]

The guy called them Michigan Enchiladas, and another friend told me I was too white to make them and should be ashamed. They were fabulous, so I don’t even care! Although you’ve made me rethink what I’m going to call the recipe to avoid confusion.
Tonight I had leftover 40 clove chicken, an everything bagel with cream cheese, and a Reese’s peanut butter heart.
