Hi everyone! I am new to this site but certainly not new to cooking dinner and posting photos of what I make. So, here is yesterday’s Sunday supper. I could not resist making this dish because the bell peppers were gorgeous and on sale this week. I stuff them with ground beef and rice and they roast in the oven in a light tomato sauce. I don’t like a thick tomato sauce with this dish. I make the sauce with tomato paste and water and seasoning and cook it down a bit and then surround the peppers with the sauce and bake.
