Hi Tasty, I did Super Nachos for 300 people on Sunday, I put them on a 9″ plate, portion size 2.5 oz of Tortilla chips. I would use a one size 3# FF boat, for “Tasties Super Nachos” Tortilla Chips, Spicy chili, Jalapeno Cheese, Sliced Jalapenos, Chopped Tomatoes, Chopped onions, sliced olives, salsa & Sour Cream. I like the idea of offering a Chili dogs with a side of chips & cheese in a 3# boat, you could also offer Chips and cheese for a lower price………………..Good luck…………When dealing with the HD on new items, make sure you know what your doing and how they will be served. If the HD has complete confidence that you can serve these items safe, it may open up your menu to other items…………BillyB
That sounds like a BIG delicious meal. What did you charge for that?
I control the Chips, Taco meat topping, Jalapeno cheese sauce and had them go through a Condiment buffet table to put on their own topping. They kill me on the toppings but I need to serve them fast. I have two people serving off of a steam table with two 4″ pans of taco meat and 2-4″ pans of cheese, we serve a plate in a few seconds. I wanted to give you an idea of toppings that will give some color to the dish. When I build one for them on a normal day, it looks great with the Black olives, red tomatoes, green Jalapenos, white onions, sour cream and red salsa…………………….I charged $5.95 with a 16 oz fountain drink……………..when I control the toppings on my line its $4.75 daily special
