Chef … I know that. I said I didn’t follow directions. But actually the cheese is placed on the flat dough then folded in half and patted to a round again (abt 3/8 to 1/2 in thick) then fried. Some of the recipes I read indicated to cut the fried cheese filled tortilla open (like pita bread) to add additional fillings. … So the way I did it resulted in corn tortilla on both sides too. … Well, I could have laid an other tortilla on top of the cheese for a stuffed tortilla then folded or rolled with other fillings.
What I made may not be a pupusas, I didn’t claim it was, but it was good.
Hi Ed, I also liked the idea, it is so simple it drives me crazy. There is a lady on youtube, punch in Papusas and check out a few of the youtube videos. From what I saw they take a portion of Masa, make a hole, put in the filling,then bring the masa over the filling and pat between your hand to make a thin filling pancake. Easier said than done, this lady makes it look like kids work. I tried it, I love the idea, mine didn’t come out all the good……………….I think your idea of taking masa, press flat, put some filling in the center and put another flat piece on top and seal………….I hope all is well……………..pnwc………………p.s. I also like the idea of slitting them open and putting in some salsa, lettuce, avocado and so on.
