As a burrito is a hot product, I don’t think guacamole, or sour cream belong inside a hot product…or lettuce for that matter (hate gooey brown guac, and wilted lettuce in a burrito…). I make chicken burritos with left over chicken saute’d in chicken stock with onions, garlic, salsa, cilantro, chili powder and cumin. I cook it slowly until the stock is gone. I puree black beans with olive oil, salsa, cilantro, chili powder and cumin. Shmear the tortilla w/ beans, add chicken and grated jack cheese, bake until slightly crispy, enjoy with wine or beer…or guacamole and chips…skip the sour cream.
