I love a good burrito, but I realize it’s not a good idea to be eating guacamole, sour cream, melted cheese and beef everyday. What are some substitute ingredients to make a healthy (veggie?) burrito?
When the visiting Northerner asked his Southern host “This barbecue is delicious, but is it healthy for you?”, the Southern friend reflected a minute and answered “Not if it’s made right…”
Seriously though, just enjoy the darn burrito! If you’re haunted by fat grams, use lean meat/drain well; use beans; use fat free sour cream; bulk it up with a bit more tomatoes, lettuce, and onion; and just enjoy the guacamole, it’s not like you have a whole pint on each burrito!
