I love a good burrito, but I realize it’s not a good idea to be eating guacamole, sour cream, melted cheese and beef everyday. What are some substitute ingredients to make a healthy (veggie?) burrito?
calabacitas: saute onion and poblano peppers in olive oil, add zucchini and yellow squash and cook until fork tender. i like to add fresh corn and/or chopped tomato.
