Dr. I “custom” made that hood it was actually a full hood that I cut down to fit, i found it “laying on the side of the road” next to a restaurant that was being demolished, but I had to clean it really good because it looked like it had been abused by the PO.
Gonzo- I wanted to go with a horizontal tank under the truck but they’re hard to come by here in Hawaii we need to ship everything from the mainland and that itself is sometimes more expensive than the actual item.
I’ll try to make time to take pics of when we are full steam, also the griddle is being replaced by a commercial heavy duty one that I will need to wrangle into the van, I got a heavy duty Wells griddle for almost nothing due to a restaurant supplier changing locations.
