BTW, I spoke to my assigned inspector and they really don’t care if I have a hood or not, as long as I have a 3 comp sink and enough water and big enough capacity in the gray tank I’m good.
That hood I got from a demolished restaurant and got it for $0 but I’ll only use it until I have $$ for a new shiny SS one.
Also our code just requires that all openings have a screen to stop flies from coming in during service ours so my window will be a simple screen, I would love to have everything nice and shiny but since the van is rather old, I’ll just save up to get a newer one then go all out.
On the TODO list is installing the backsplash, cutting the table to make it into an equipment stand installing equipment, lining the other wall and roof with FRP and installing plumbing
