As posted above, my brother and I operate a trailer in Rochester NH. The regulations are pretty straight forward. Licensing and permits are FEIN, State room and meals tax license, and city health dept. license. Required equipment are 4 sinks, running hot and cold, and ansul fire prevention hood for grills and fryers. We lease a site from the state owned airport and operate 7-8 months a year depending on weather. Though the state standards are applied in Rochester less regulation may be required elsewhere and you will need to check on a town by town basis. HD inspections happen about twice a year. Oh yeah-on startup in Rochester we needed a fire marshal inspection of the hood system and yearly tests by a licensed installer to the tune of about $150. FEIN (federal employers ID #) is free, state R&M about $5 every three years and city license about $80 a year. $1 million Liability runs about $600. Any other questions?
