Well, I don’t operate a trailer but plan on opening in the spring. I’m going to build the trailer off a old snow machine trailer.
My background is as a competition BBQ cook who started catering a few years ago. Vermont requires 2 licenses for catering, a Home Catering license, You with potable water can cook out of your home- easy peasy. The Commercial Caterer license allows you to cook on site any where. Both licenses are $160. The rooms and meals license is free.
Each town is different with the permit to vend in. My town, Essex, Is a PIA. After spending $300 on plot plan copies and registered letters to abutters I go before 2 different town boards (planing and zoning) to get approval of my site. other towns are easier.
I can’t wate for the snow to melt to start working on my trailer.
You say I need both caterers license? the way I read the VT.law was if I was cooking on site I could get just the commercial caterer license, but if I get both license what do they, come and inspect the home ? if so what do they check? and would you be able to do home catering with out municipal water, just a well? what about grease traps??
