Tasty Dogs, kraut is one of the easiest toppings you can carry without a strong following. you absolutely can serve it cold.
if you’re using a standard 6″ dog all you need is about an ounce to an ounce and a half, stored in your cooler in a little two-ounce cup with lid. it costs about .15 total per serving and has a longer shelf life than you and i put together. if you start serving 25 kraut dogs per day you might re-evaluate. try using the crispy stuff in the plastic bag in your grocer’s refrigerator.
i charge .25 for it, but often give it for free, depending on the dynamics of each particular case. if you always gave it free, it would balance out well with all the ketchup, mustard or plain dogs that are more popular. the best part is that if your menu says “kraut .25” and you give it to them “on the house” your customer gets a inkling for how special you truly think they are.
