We spend quite a bit of time on this board talking about original recipes and restaurants now gone. We talk about how many have changed for the worse over the years and romantacize how good it was
Here’s a thought. What if for a limited time, say a week or even a day, an old established restaurant or chain actually brought back the original recipe and taste. It would be costly to return to scratch and source out replacements. It may have to be prepared with things that today would seem unhealthy such as lard or bacon fat. Even with an original recipe, spice vendors change over time and processes used may alter a taste that once was common, same with other ingredients, even produce with agricultural strains selecting for different attributes.
Many restaurants or chains would be long gone, but family members have kept the original documents and recipes perhaps letting another restaurant do the re-creations under family auspicies. In some cases I’m sure existing restaurants wouldn’t want you to taste the orginal as what they are serving has slowly drifted and crept away from the original original, yet they serve it today as if it was never adulterated.
Our tastes change too. With age, with healthier types of preparation, with the expectation of flavor enhancing additives that weren’t part of the original. The old may taste bland,unappealingly coat the tounge with fat, or taste rancid with original ingredients. The original’s color and texture may look unapaletable by today’s standards.
