Tacoma WA just passed a resolution to allow food carts back in town.  They’re very restrictive as to just where they can set up, but at least they are noticing that there’s a need and demand for them.  Now if I can only convince them that my 20′ trailer would look perfectly fine on Pacific Ave……..
