The sauerkraut balls at Waterloo are tasty, but IMO far too big and falling-apart to meet standards as an hors d’oeuvre, which is their role. A true kraut ball should be compact and no more than an inch and a half in diameter, for spearing with a toothpick and dipping in cocktail, hot mustard or horseradish sauce. Waterloo’s are fork food, a happy mess.
