When I worked for a Ukrainian woman in Alaska, we would make borscht every week. Seems like we put just about everything we could think of in it including but not limited to, beets, onions, pork, beef, chicken, parsley, dill, turnips, potatoes, carrots,cabbage, celery, whatever… I’m not sure if this is a traditional Russian borscht but it sure was good and great on those long dark winter Alaskan days.
