In Taos, NM there are lots of good places but the one that I would recommend for regional significance and unique experience would be the Tiwa Kitchen Restaurant that serves authentic and local Pueblo food and bakes it bread in an earthen wood-fired oven. The food is excellent and prices are modest. It is located just outside the entrance to Taos Pueblo which I would also recommend visiting.
