Cosmos…………I consider myself an EXCELLENT cook, as does anyone that knows me, and I am telling you, the simply potatoes are wonderful!! Lets see…work full time and spend 35 minutes on a side dish, or 10 mins in the microwave????? Give them a try someday!!! Don;t be so close minded!
I don’t know if its close minded…I just don’t get it. I work full time, in fact for the last three months I have been working seven days a week. Nearly every night I come home around seven, and cook dinner. Last night it was grilled lamb chops, garlic mashed red potatoes and avocado-tomato salad with olive oil and balsamic vinegar.
I started the charcoal, washed the potatoes, put them on to boil, wrapped two cloves of garlic with a little olive oil in foil, put it near the coals, sliced the tomatoes, added olive oil, salt and pepper. Then I had a glass of wine, grilled the chops, let them rest and mashed the spuds with garlic, butter and half and half (because I forgot to pick-up milk when I shopped after work), sliced the avocado and tossed with the tomatoes.
Less than an hour later enjoyed a home cooked, healthy (half and half non-withstanding) meal. Nothing I cook for dinner is going to take less than 30 minutes, so mashed spuds…no biggy.
