Wow Cosmos. I could not do that. I could not work until 7 and then cook for an hour. No friggin way. I suspect there are more people in my camp than yours. Don’t get me wrong, I respect that you have that energy! I. Just. Don’t. And I love cooking.

My solution is to cook ahead of time and then freeze and store the leftovers. Mashed potatoes freeze pretty well. I usually cook about twice a week and then live off/freeze the leftovers. Love my Foodsaver vacuum dealie! I know that is not for everyone since meals are repeated often throughout the week, and it requires planning, but it is my own home cooking. No gunk. And I always have something in the freezer for when I am hungry.
