To the best of my knowledge you are right on bekeseeta! Spent a lot of my youth in the late 70s playing in bands and visiting Jerome’s early in the morning after gigs feasting on pork butt steaks and kielbasa smothered in that great sauce! Years later, my ex wife got the recipe from a co-worker in McKeesport who repeated the same story of the card game and the recipe was pretty much exactly as you state. Less is certainly more! If you read the ingredients in Worcestershire Sauce you can see where most of the flavors and the dark color come from. Celery Seed is also a key ingredient and as you say, you just add more cayenne for the heat level you desire. And yes it was BADMAN not Batman: “Mild Child”, “Hot Woman” and “Bad Man”! I like to make it ahead of time and then refrigerate it to draw out the flavors. Nothing works better with pork than this great, simple sauce!
