we’ve gone with an almost total mexican menu when we do festivals because nobody else seems to be doing it & it’s gotten us into several events that have been closed to us in years past. Quesadilla’s, taco’s, fajita’s & a wicked chicken wrap that’s basically a buffalo chicken breast with salsa & jalapeno’s. We offer steak or chicken on the wraps & quesadilla & use chicken or ground beef on the taco. 3 meats, 2 tort sizes & the fixen’s…….lettuce, tomato, cheese, salsa & sour cream. makes the supplies pretty easy to handle. the chicken outsells the steak & beef & we’re thinking of doing just a veggie wrap. in our permanent location we also do Philly cheesesteaks, burgers & dogs.
First you can call the BBQ Parfait a pulled Pork Parfait or what ever name you want most event people don’t really care. But that said if you can do all the good Mexican items why the question. Hell that’s your answer. LOL
