we’ve gone with an almost total mexican menu when we do festivals because nobody else seems to be doing it & it’s gotten us into several events that have been closed to us in years past. Quesadilla’s, taco’s, fajita’s & a wicked chicken wrap that’s basically a buffalo chicken breast with salsa & jalapeno’s. We offer steak or chicken on the wraps & quesadilla & use chicken or ground beef on the taco. 3 meats, 2 tort sizes & the fixen’s…….lettuce, tomato, cheese, salsa & sour cream. makes the supplies pretty easy to handle. the chicken outsells the steak & beef & we’re thinking of doing just a veggie wrap. in our permanent location we also do Philly cheesesteaks, burgers & dogs.
