Hi, getting in late here, but for future reference …
An old friend, Prison Chef, once told me he uses the cheapest bottle of lemon or lime juice to clean greasy things like grill tops, and I have used it everywhere. Also, we purchased a small steam cleaner to do the hoods and filters as well as any other stainless surface, it is Brilliant! Not the smallest hand sized one, but one that looks like a small canister vacuum. It produces loads of steam and cuts through the grease. We generally use a putty knife or some kind of scrubby pad with it. Works well for large areas and the Health inspectors love the idea as it sanitizes too. Small enough and easy enough to get out daily or weekly. We do BBQ, and rub and grease are always getting stuck on tough. Highly recommend this method.
PS … The unit we have cost in the range of $100 to $150 so it is cheap enough, especially when you take in the cost of buying cleaners and resupplying.
