I sell the Vienna Beef 8:1 dog as standard on my cart…costs me only 6 cents less than that Nathans from Sam’s. I offer the Nathans Qtr Lb upgrade for only $1 more on top of any dog price on my menu. All I do is pull it out of the pan when I am prepping the dog and shoe it to the customer and offer the deal. I get about 50% upgrade that way. It is a very profitable method so far. I use the standard bun though, not the big one from Sam’s. It is a bit messy, but folks don’t mind, and it re-enforces how much bigger the Nathans dog is.
The Sam’s cafe also has small packets of Kraut for about .17 cents ea. That is nice cause you control waste and everything is sanitary. I put the kraut on my flat plate griddle for about 20 secs to heat it up…people love the taste and the show.
