Just think of it as a pile of meat with a couple of carbohydrate bookends to keep it from scattering all over the plate.[;)]
 
Although I do agree.  As much as I love corned beef and pastrami, part of the appeal of having it in a sandwich is the balance between it, the bread, and the Swiss cheese.
