Seeing as how you’re in AZ, I’d suggest replacing the pepper jack with some type of Mexican cheese, I’d suggest Queso manchego, Queso jalapeño or Queso chihuahua, or any combination thereof. I would also garnish the sandwiches with a sprinkle of Queso cotija.
I need to get educated on Mexican Cheeses. I have trouble differentating them as to which ones go with what, the Spanish names throw me off. I don’t know how many times I stood at the cheese section at a Mexican supermarket trying to decide what to do. If anyone can give me a primer on these different types, I’d appreciate it. I guess I need to just start buying them and trying them out.
