“The Corn in the Cup” looks a little bit like Jazzed Up Grits.
The Coffee Cup in Pensacola serves a similar dish of Grits called Nassau Grits made with a Caribbean Red Sauce. I could see skipping the sour cream & Parmesan cheese adding Salsa and Mexican Cheese to that dish and calling it Mexican Grits!
