I’ve had that corn before at Latin street fairs here in NYC, but in a different presentation…on the cob.  I think that makes all the difference.  You get the crunch of biting the corn right off the cob and the juices come out from the kernels at that point rather than having a chance to pool in a bowl/cup.  This is what I had from a Latin food truck at a food blogger meet up in Red Hook Brooklyn a couple of years ago:
