I doubt that my favorite Memphis BBQ joint, Payne’s is open on Sundays.

I would avoid Rendezvous and Corky’s any day of the week.
 
You might want to consider Coletta’s  for BBQ Pizza- they are open on Sundays.
 
I really wanted to check out Central BBQ, hopefully I will have the opportunity next year when I plan to revisit Memphis & Mississippi
