Hey my area cannot use par baked buns. Steam to finish on cart.
Said bacteria could grow before completely finished. Go figure.
If I purchase slaw, or condiments have to leave in original containers.
I found  two good buns to steam, fully cooked but pulled my hair out on that one.
You can be fully enclosed here if you put up fully screened  tent with serving window. Have friends do this all the time. it is enclosed.
They work out of a 10x 20 size. They have shown me how and where to do the zippered window.
