I’m no professional but I grew up 2 blocks from Kowalski’s one-and-only factory and have been eating their dogs all my 50+ years.  I’ve never seen them darker colored or smoky flavored.  They are always bright pink and taste like plain bologna.  Maybe your butcher did something to them but they didn’t leave the factory like that.
