We finish off the kielbasa on a tiny griddle over a gas burner. The same griddle we heat the meat for our subs/hoagies on.

Is your gas burner for your griddle a permanent mount?
I’ve looked at pictures of your cart many times, but I don’t believe I’ve ever seen an extra burner in the pictures.
