For chili, there are a lot of recipes for this on the net, it should be basically a very good meat sauce, classic bolognese,….(before you all jump in here, if you look up a classic bolognese, it is a meat sauce, not a tomato based pasta sauce as most Americans call it). Anyway a good classic bolognese with the addition of chili usually in the form of Ancho, which you can find in most international food stores in the dried spice section. This sauce should be tangy, so additional sugar and vinegar to the basic bolognese will get you there. It needs to have a punch, as you are using it as a condiment, so when you taste test, do it with that in mind, meaning it should be over the top with flavor. If at all possible I want to avoid any unnecessary complications and I fear making my own chili might be a big one. I might look into buying it from a restaurant or caterer daily.
