I know how you feel. It was hard for me to get organized at first. Maybe if you pack 2 duplicate bags or containers with everything you need. Keep one in your car at all times,and do not touch it unless you run out of something. The other one you will use daily of course. This way you are not bringing in duplicates, and extra stuff from your car every night. You are only bringing one small container per night. The other container left in your car can be your emergency backup.
Try to bring the basics in both containers. Tongs (1 pair), forks,knife,thermometer,3 towels,lighter,money apron.
If you sell sodas/waters only bring one cooler full. Keep a couple cases of soda and water in your car at all times as well. Do not lug them in and out of the house every day. I personally cut back on product I take. I used to load up a couple coolers just in case I run out but 99.9 % of the time I came back too much product. Same applies to meat.condiments etc… If I sell out, I am happy either way.
Coolers with wheels are a must. You can use them as a small hand cart for your other items as well.
I also like to bring a spray bottle filled with dish soap/water, small towel and a sponge. I keep this in my truck at all times. I clean off my cart right after I am done serving. I actually clean it the last half hour I’m open. I put whatever is left in one of my steam pans. I set it to the side on the cart. They stay warm for the remaining half hour, and I get a little head start on my cleaning. This is also good because customers see you cleaning your cart, and they realize how clean and sanitary your process is.
I have a lot of things I have done to make my process much easier. I finally started to work smarter, and not harder. lol (most of the time)
