what makes a trailer or enclosed area any different. Some areas require food handlers to take classes. It all depends on the individual about how clean they want to be. Just because someone has a trailer does not make them any better than a cart person. I have found over time that the higher dollar rest. in some areas their insp. report are lower than most. In fact years ago one of the most prominiet Rest.’s on the beach in Pinnellas Co., FL always got shut down for cleanliness.
 In my area no sinks, just hand wipes. I go three counties away 4 sinks required on my cart.  
What scares me is Church dinners. Going to say Auburndale FL  early 2000-01  church getogether 11 people died from food not being handled right.
