Hey Mikey, Hows everything going??? take a look at Chefbubas Trailer, it is set up like the front line of a restaurant. There is no reason he shouldn’t be required to be inspected like a restaurant. He has worked in this business for many years and know how to give the HD what they need. My argument is, if you want to play the game, get the right equipment, as he did. All of the HD carts are VERY limited in Refers, prep areas, storage, knowledge of food handling, and many other areas. The HD cart is, what it is. Its a glorified steamtable on wheels. If you want to be a bigger player, then get the equipment to match…….Billyb
