That is “sharp” provolone on the sandwich as “advertised” I can only assume it’s deli sliced .
I’ve noticed many soul food and “country cookin'” restaurants down south serve fried chicken that way. Roadfood’s own Prices’s Chicken Coop in Charlotte is a prime example. I’m not sure why though.
Sharp provolone is almost impossible to slice…it crumbles. Sandwich sure looks good,though!
