Patio four beef enchiladas, fixed up w/ cheese and pickled nacho sliced jalapenos;

Cook about half way and then spoon the sauce on top of the enchiladas and finish cooking. Now add the cheese and jalapenos and cook a bit more till the cheese melts. I do it all in the nuker sometimes. Melt the cheese part under the broiler works even better.

Now do some Lipton Spanish, or Mexican, Rice and a can of refried beans (about 2 bucks for both), some salsa and chips… and your fixed. This makes a meal for 2… or one REAL hungry Tex Mexer.

This is a favorite meal for some in my family.

Oh, the cheese and jalapeno deal also works w/ a cheep can of Tamales. Austex is my fav but Hormel Hot is not bad.
