Our first day is over now. Not long after we arrived the inspector showed up for our first real world inspection. Everything passed with no findings. He cautioned us on not having an AC unit installed, said something we should think about adding.
Started the morning at the Farmer’s Market as the newbies. Sold a few breakfasts but the rush hit around 11am and lasted until probably 12:30. We had long lines, saw some people leave the line, but had lots of praises on the food and were told the food was raising quite a stir around the market. We had several that came back and ordered more. Cycle times were way too slow as we figured out our system. Checking the order times on Square Register, which worked great by the way, we were around 3 minutes per order. All the equipment worked, layout needs some tweaking but overall it was a fast paced thrill of a ride.
