as far as the pre-packaging potentially hazardous condiments, i use little 2oz. plastic cups from R.D. Sam’s sells them, but makes me buy a whole case. R.D. will sell me individual stacks. it adds about .05 to each condiment serving. in addition to being in compliance, the cups are also clean and easy to use and store.
as for the sausages…anything can happen with any given HD, but in my area they are OK with pre-cooked sausages.
