first let me apologise for some rude post that show up from time to time.  I was told raw onions and peppers only.

there is no way around that like pre packaged or other method, like there is with chili and cheese.

A good rule of thumb is if it doesn’t have to be refrigerated after opening, it way or may not be ok, for example if you can find chili sauce, or cheese, of some type that doesn’t have to be refrigerated after opening K Hensdell at the HD said it could be used. 

Every one here knows of my views on the ridiculous regulations here in Florida, but until we can get them changed , I do not condone or recommend braking them.  look into festivals and events, the regs. are far more relaxed there.  In  30 years, after the inicial inspection, which were rare, I never saw another inspector, with the exception of fairs, and carnivals.
